WE HAVE A WINNER!!! Random.org generated number 2 : Vickie Bartlett – Congratulations!!!

Coconut Trees are the ultimate epitome of a Tropical Island living and these trees have been a part of my life growing up back in the Philippines. And though it has many uses, none can top the end product derived from its’ fruit, one of them being the coconut oil.

My late grandmother used to apply freshly extracted coconut oil on her hair after every shower to moisturize it. Or my mom would put camphor on a jar of coconut oil and use it as a liniment which is generally used during cooler weather. But best of all, I love it when it’s use for frying or sauteing food. Coconut oil gives every fried or sauteed dish that little oomph and enhances the palate! It’s distinct aroma and coconutty flavor is just sumptous. They’re also great on salads! How I miss the island life!

gold_label_virgin_coconut_oil_32ozFortunately, friends from Tropical Traditions has given me the chance to relive those gone days by sending me a big jar of their Gold Label Virgin Coconut Oil to use. Needless to say, it was immediately used. My husband who has never used coconut oil before has tried it for the firs time by cooking the hash brown with it last week and was impressed! According to him, it has given the dish a very distinct yet flavorful taste. As for me, it was like a Ratatouille moment experienced by Anton Ego when he took that first bite of the dish & was transported back to his childhood days.  Magical!

I can go on and on and rave about how much I love coconut oil but I want to give you the chance to experience them yourself by giving away the same big jar to one lucky reader!

I love the Coconut Cream Concentrate because it is such a flavorful way to get more Coconut oil into my diet by using it to make many tasty snacks. My “Better Than Candy Nut Crunchies” (recipe was posted on the Tropical Traditions recipe blog) is my most favorite way to use it, but I also like the cheesecake and dreamsicles. I regularly use the Oil; both the Gold lable and the expeller pressed depending on wheather or not I want the coconut flavor in a particular dish.
